Fudgy Crinkle-Top Chocolate Brownies

There is something truly special about a good brownie. That soft, fudgy centre with a delicate crinkly top is what makes them so irresistible. This recipe gives you that perfect balance — rich, chocolatey, and just the right amount of indulgent.
These are the kind of brownies that feel like a proper treat. They are simple to make, but the texture and flavour make them feel a little bit special every time.

Why this recipe works
The combination of melted chocolate and butter gives these brownies their rich, fudgy texture. Adding cocoa powder directly into the warm mixture helps to “bloom” the cocoa, which deepens the chocolate flavour.
Whisking the eggs and sugar until pale and glossy is what creates that beautiful crinkle top — a small step that makes a big difference.
Ingredients:
200g chocolate (100g milk + 100g dark) melted
150g butter
30g cocoa powder
2 large eggs
1 egg yolk
185g caster sugar
100g plain flour
Instructions:
Preheat your oven to 160°C (fan) or 170°C conventional, and line a baking tin with parchment paper.
In a heatproof bowl, melt the butter and chocolate together until smooth. While the mixture is still warm, stir in the cocoa powder. This helps bring out a deeper chocolate flavour.
In a separate bowl, whisk together the eggs, egg yolk, and caster sugar until the mixture becomes pale, thick, and glossy. This step is important for achieving that signature crinkle top.
Slowly pour the melted chocolate and butter mixture into the egg mixture, gently folding as you go.
Add the flour and fold everything together until just combined. Try not to overmix, keep it gentle to maintain that fudgy texture.
Pour the batter into your prepared tin and smooth the top.
Bake for 22–25 minutes.
The brownies should still have a slight wobble in the centre when you take them out, this is what keeps them soft and fudgy once cooled.
Simple baking tips for perfect brownies
